This is one of my older cakes, but I had such a wonderful time creating it, I just had to share it with all of you!

I don't consider myself a very trendy person, and I am always highly skeptical when pastry trends involve high volumes of food coloring. But there is something magical, for children and adults alike, to be given a cake that looks perfectly simple and pristine on the outside, only to cut into it and find a whole other universe of color and flavor.

With this cake, I went for the more traditional rainbow colors, mirroring that on the outside of the cake with rainbow colored gum paste roses. However, this theme could be repeated with pastels, in an ombre pattern, or even in alternating layers of colors.

The cake here is a vanilla cake with a vanilla italian meringue buttercream--which helped me easily add coloring and keep the contrast between the layers more distinct--though really any flavor combination could be used.
